Nicole Gilliver, an Aussie native, got the travel bug early, launching into a 9-month stint in a 16th century chateau in the Loire Valley of France at age 17, where she experienced the fine food, wine, and the history of Europe that has since shaped her future. Returning to Australia, she undertook studies in wine marketing and worked in the Australian wine industry. Recently, she became an owner of Australia’s only organically certified sheep dairy in Tasmania, where she spends most of her year, working with her family making cheese, cooking, and enjoying the pristine wilderness of Tasmania. When not in Tassie, she can be found in Europe enjoying the company of the German side of her family and indulging her passions for the finer side of Europe. Nicole speaks French and German.
